Cheese topped semolina pancake 

It's a quick and easy healthy snacking option you just need to soak it for 30 minutes semolina pancakes are popular in several cuisines in Indian cuisine it's known as Uthappam, Moroccon's know it as  Beghir. It can be served in breakfast, as a side dish, and a savory snack.

To prepare a semolina pancake you will need;

Semolina -1cup
Yogurt -1cup
Salt -1/4tsp
Oil for frying-1 tablespoon
Baking soda/baking powder -A pinch
Water to adjust the batter consistency -2cup
Cheese of your choice

But before that, I would like to give an idea of choosing the type of semolina,  please use fine-grained semolina.
Semolina in this recipe is raw -dry roasting of semolina is not the choice for this recipe as it will cause a difference in taste and color  of your pancake

Pancake batter preparation

  1. Mix semolina, yogurt, water to make a batter in a bowl
  2. Cover and let it rest for 30 minute 
  3. After this add salt and a pinch of baking soda to the batter and mix well
  4. Heat a nonstick pan on medium heat 
  5. Brush oil on the pan 
  6. Pour one cup of batter and let it spread on the pan
  7. Cook for 1 minute 
  8. Add grated cheese onto the pancake while still on the flame 
  9. Sprinkle some water on the pan and quickly cover the pan  
  10. The top layer will cook in steam you don't need to flip the pancake.
  11. Let it cook for 2 minutes and you're done.

Serve this pancake with any dip of your choice. I have served this with traditional Indian coconut chutney. My cheese for today was grated cheddar mixed with some Turkish cheese. A total of 3 to 4 pancakes can be made from the batter.
Servings - 2 person

These pancakes are easy to make, but in order to for the proper shape and bubbles to form properly, the batter must be the right consistency. If the batter is too thick, the bubbles can't form.
