We love to eat the corn on the cob it's healthy and it's filling full of fibers, here I am sharing one simple recipe for corn lovers.
Hey Food lovers my idea is to create as many healthy recipes as possible so let’s get going to another healthy recipe. This recipe is kids friendly and highly nutritious suitable for adults as well. You just need to be motivated to eat healthily.

To start you will need

·         4 corn on the cob(peeled)

·         1 cup low-fat milk

·         ½ tbsp. butter( salted/ unsalted)

·         1tbsp chopped cranberries( dried)

·         Pinch of salt

·         Parsley (garnish)

·         10 Pine Nuts (Dehusked)


Let’s get Going


·         Boil the corn cob in the pot for 10 minutes (boiling is always preferred choice for me.)

·         Or Microwave for 5 minutes

·         Allow it cool

·         Grate through larger grits of the grater. Keep it aside.

·         Heat the pan on medium flame.

·         Add butter let it partially melt add the cranberries and toss for 60 sec

·         Put in the grated corn in the pan mix.

·         Pour in the milk mix well and keep stirring in between for 2-3 minutes on high flame or wait for creamy mass to form.

·         Add the salt mix well.

·         Garnish with chopped parsley and pine nuts.

 You can add nuts of your choice. But the aroma of pine nuts blends really well with creamy corn.

Tip: Instead of using the corn on the corn on the cob you can directly boil some frozen sweet corn and give it a turn in the grinder. Corn from the Cob’s tastes better.

How to boil the corn on the cob?

The best way to boil the corn on the cob is to remove the husk and silk thread and put it into a large pot filled with boiling water and then let it boil for 4-5 minutes to enjoy the corn on in different ways. In the above recipe, I have boiled for 10 minutes to decrease the cooking time in the recipe at a later stage.

How to boil frozen corn?

Boiling frozen corn kernels you can speed up the process by first putting the frozen corn kernels into a bowl full of water leave for 30 seconds and then strain or wash under running water but I prefer the first one as it saves water. Then boil for 4-5 minutes on stove strain and it's done.
